The first aroma to greet you on opening a bottle of the Glenfiddich 12 Year Old is always sweet green fruit. Pour a dram and let it rest a minute, and then a toffee note comes through, followed by a light woody spice. But add a splash of water – Glenfiddich takes very well to water – and the green pears return in spades.

Glenfiddich lay great emphasis on the fruit character of their whiskies. There is a common thread through every dram, from the newly distilled spirit all the way to the 40 Year Old, a green note, of fresh crunchy pears.

Cask selection is also important, and indeed Glenfiddich go further than most distilleries in their use of large marrying tuns, where the spirit from many casks is brought together and rested to allow the flavours to harmonise before bottling. But in the 12 Year Old, cask flavours take a supporting role.

The palate is light, smooth and fruity, accurately following the nose in offering pears and subtle oak, and with a very refreshing finish.

The 'Fiddich 12 makes a great summer dram, so get some in your hip flask the next time you're out and about.
