Bushmills

It's over 400 years since King James 1 gave the original grant for Sir Thomas Philips to distill whiskey in the Bushmills region. Many other things will have moved on, but the methods of distillation haven't changed much. Bushmills still distills three times, retains its elegant, long-necked stills, and continues to lay great store in its cask selection for the all important maturation phase.

Hilden Brewery

On the outskirts of Lisburn just off the road to Belfast sits Northern Ireland's oldest independent brewery, Hilden Brewery. Just back from the UK in the early 1980s where craft brewing was beginning to re-emerge, Seamus and Ann Scullion converted Hilden House's former stables into their brewhouse. Having done his training across the water at Heriot-Watt, the Scullions' son Owen is in charge of brewing these days. He creates a wide spectrum of beers, from light ales to chocolate stouts, many of which are seen over on the mainland.
